Can’t Cook But Trying

I am trying to get back on track with my learn-to-cook resolution so this weekend I tried my hand to making a non-traditional Roast Beef.
Recipe:
Shop bought:
Irish Round Roast (Supervalu €4.74)
1 Red Onion (Supervalu €0.16c)
Bisto Gravy Ganuelas (Supervalu €1.05)
In the Cupboard:
Butter
Salt & Pepper
Wholegrain Mustard with Guinness
Olive Oil
Milk

Directions:
Mix one tsp of salt & pepper with 1 tbls of olive oil.
Use pastry brush to cover meat with olive oil mixture.
Put meat in over on open rack at 200c for 20 minutes. Turn meat after 20 minutes & cook for a further 20 minutes. (increase cooking time to 25 mins each side for medium and 30 mins each side for well done.)
Peel potatoes & place in pot and set to boil.
Slice red onion into full circles. Fry on a medium heat until crispy.
Mix gravy grauels with water as per instrucitons.
When potatos are soft, drain and mash.
Add half cup of milk and a chunk of butter (about a tablespoon) to the potatoes.
Add a tblsp of whole grain to potatoes and mash fully.
Remove beef from oven and allow to stand for 10 minutes.
Make a thick pat of potatoe in the centre of the plate.
Place the crispy onins and sliced beef on top of the potatoe.
Add gravy as desired.
And most importantly, enjoy.

@Tatty – It was delicious. I always think that roast beef is over done so I was careful to have it nice and rare. I’ll definitely make it again and ti’s really a rather cheap tasty dinner for a Sunday.

You should keep the butter in the fridge.
